Your chef explains: "In the UK I would have decided on the Menu and then shopped for the ingredients, however living in France, I have learned that it is not possible to do this as the French markets are very seasonal. So rather than giving a definite menu, I prefer to give a slightly amendable one, so I can take advantage of the very fresh produce."
